Savoury antipasti cake

  1. Preheat the oven to 180°C. Grease and line a 20 cm loaf pan with baking paper
  2. Combine the flour, baking powder, salt, pepper and thyme.
  3. In a separate bowl, whisk together the eggs, milk and olive oil.
  4. Add the wet ingredients to the dry ingredients and gently fold until just combined - do not overmix. 7
  5. Add the Parmesan, feta, olives and sun-dried tomatoes.
  6. Transfer the mixture to the prepared loaf pan and bake for 40 minutes, or until a skewer inserted in the centre comes out clean.
  7. Allow to cool slightly before turning out.
